Hey foodies! Today I am super excited to share with you one of the most popular Indian snack, Paneer Kachori. This dish is not only a favourite of street food enthusiast but is also enjoyed in many household. This mouthwatering dish combines the richness of paneer (Indian cottage cheese) with the crispy, flaky goodness of deep-fried kachoris.

How to make paneer khasta kachori at home?
Ingredients for Paneer kachori
For kachori dough :-
- 3 cups all purpose flour
- ½ tablespoon salt
- ½ tablespoon ajwain
- ¼ cup ghee
For stuffing :-
- 1 ½ tablespoon of oil
- 1 tablespoon cumin seed
- 1 medium sized chopped onion
- 1 medium size chopped green chilli
- 1 tablespoon ginger garlic paste
- ½ tablespoon cumin powder
- 1 tablespoon coriander powder
- 1 tablespoon red chilli powder
- 250-gram grated paneer
- Some chopped coriander leaves
How to make khasta kachori dough?
- In a bowl, take 3 cups of maida ( you can also add 1 ½ cup maida and 1 ½ cup aata according to your wish).
- Then, in the flour add ½ tablespoon of salt, ½ tablespoon of ajwain and ¼ cup ghee.
- Now with the help of your hands and palm, mix all of the ingredients properly, make sure there’s no lumps left in the dough.
- Once all the ingredients are mixed add water to the flour and prepare a stiff dough.
- After the dough is ready, apply 1 tablespoon ghee on top of the dough and cover it with a muslin cloth.
- Set the dough aside for 30-40 minutes.
How to prepare stuffing for khasta kachori?
- Heat 1 ½ tablespoon of oil in a pan, add 1 tablespoon of cumin seed and saute it.
- Add 1 tablespoon of ginger garlic paste and continue sauting.
- Then add 1 medium sized chopped onion and chopped green chillies and saute until it turns brown.
- Now add ½ tablespoon cumin powder, 1 tablespoon coriander powder and 1 tablespoon red chilli powder and saute for a minute.
- Then add 250 grams of grated paneer and chopped coriander in the pan and mix all the ingredients properly.
- Once the paneer looks cooked, turn off the stove( don’t overcook the paneer).
How to prepare kachoris?
- Divide the rested dough into equal sized balls.
- Pick one part and roll it like a ball. Once done, roll gently with the help of rolling pin.
- Place 2 tablespoons of the paneer filling in the center of the rolled dough. Cover the filling with the dough by slowly stretching it over the filling.
- Seal the ends and remove the excess dough. Do the same with the remaining dough.
- Once all done, deep fry the kachori until turn brown and crispy.
- Enjoy hot kachoris with sauce or green chutney.
