Vegetable Manchurian Gravy| Easy homemade recipe| Veg manchurian

Vegetable Manchurian is a favourite Indo-Chinese dish enjoyed by most of us.  It is a deep-fried vegetable balls served with hot and spicy gravy that adds the tangy flavour to it. Vegetable Manchurian is mostly served with noodles and fried rice but it also a perfect appetizer or snack. Vegetable manchurian is a perfect fusion of Indian and Chinese culinary traditions. It is believed that this dish immerged back in 20th century when the Chinese immigrants adapted their cuisine to suit the local taste and ingredients in Kolkata, India. In the process they combined the Chinese cooking technique with Indian flavours and spices. Over the time the dish gained popularity and became favourite dish cooked in restaurants and homes.

INGREDIENTS (servings – 4 people)

  • 100 grams finely chopped cabbage
  • 50 grams grated carrot (1 medium size carrot)
  • 50 grams chopped onion
  • 50 grams chopped mushroom (optional)
  • 30 grams coriander
  • 30 grams chopped spring onion
  • 1 tablespoon chopped ginger
  • 1 tablespoon chopped garlic
  • Some chopped bell peppers
  • 3 tablespoons cornflour
  • 3 tablespoons all-purpose flour/ maida
  • ½ tablespoon black pepper
  • Salt to taste
  • Oil for deep frying
  • Some bread crumbs
  • 1 ½ tablespoon oil
  • 1 tablespoon chopped ginger
  • 1 tablespoon chopped garlic
  • ½ cup chopped bell pepper
  • ½ cup spring onion
  • 3 finely chopped green chillies
  • 2 tablespoons tomato sauce
  • 1 tablespoon soy sauce
  • 1 tablespoon vinegar
  • Pepper or red chilli flakes as per your taste (you can also add red chilli sauce)
  • 1 ½ tablespoon cornflour
  • A pinch of sugar
  • Salt to taste

How to make Vegetable Manchurian recipe?

Step 1 – How to make manchurian balls?

  1. Add all the vegetables, ginger, garlic, cornflour and maida in a bowl, now add black pepper and salt to it and gently mix them all. Then you can add bread crumbs to it (adding bread crumbs will make the balls crispyafter frying them).
  2. Now take small portions and make balls without putting much pressure.
  3. Make sure the balls turn out smooth and crack free.
  4. Heat the oil in a pan to deep fry the balls. Now add the balls gently into the oil and deep fry them until it turns deep brown in colour, remove the excess oil from the fried balls.
  5. Keep the crispy fried balls aside.
  6. Dissolve 1 ½ tablespoon of cornflour and 2 tablespoons of water in a small cup and set this aside.

Step 2- How to make the manchurian gravy?

  1. In a pan, add 1 ½ tablespoon of oil, once the oil is heated add garlic and ginger to it and saute them until they start to turn little brown.
  2. Add chopped bell peppers and spring onion in the pan and saute them on high flame without burning it.
  3. Now add 2 tablespoons of tomato sauce, 1 tablespoon of soy sauce, and 1 tablespoon of vinegar in the pan.
  4. Stir and add the Cornflour and water mixture that we kept aside and continuing stirring the gravy.
  5. Add salt, a pinch of sugar and pepper to the pan and continue stirring for few minutes until the consistency of the gravy thickens.
  6. Now just before you serve the manchurian add the manchurian balls in the gravy and serve hot.
  7. You can also garnish the vegetable manchurian with some finely chopped spring onion.
  8. Voila! enjoy the vegetable manchurian hot and tasty.
